About the course

What can I expect out of this qualification?

The purpose of this qualification is:
- To provide competent employees for the hospitality sector who are able to work as chefs in senior positions producing advanced dishes in a professional kitchen.
- To establish standards of professional practice for advanced cookery that can provide customers with confidence in a range of hospitality environments.

Graduates will be able to plan, control and direct the day-to-day and long-term operations of a professional kitchen including supervision of staff.
The strands in this qualification allow graduates to have advanced general cookery skills or to specialise in pâtisserie.

Entry Requirements

Minimum requirements

New Zealand citzen or resident. Must have acheived NZ Certificate in Cookery Level 4, National Certificate in Level 4 or equivalent or demonstrated equivalent industry pratical competence, knowledge and experience. Must be over 18 years of age, and learner musr have completed the food safety units in the Level 4 programme to start the Level 5 programme.
