About the course

What can I expect out of this qualification?

The purpose of this qualification is:
- To provide competent employees for the hospitality sector who are able to work as chefs in senior positions producing advanced dishes in a professional kitchen.
- To establish standards of professional practice for advanced cookery that can provide customers with confidence in a range of hospitality environments.

Graduates will be able to plan, control and direct the day-to-day and long-term operations of a professional kitchen including supervision of staff.
The strands in this qualification allow graduates to have advanced general cookery skills or to specialise in pâtisserie.

Minimum requirements

Academic Criteria * Hold a Cookery - related qualification at Level 4 NZQCF or * Have current and equivalent skills and experience in a Cookery - related role English Language * Domestic students with ESOL: must be proficient in English language. * International students: Academic or General IELTS score of 5.5 with no band score lower than 5.0, or equivalent NZQA Recognised International English Proficiency. Additional Requirement for learners who enrol in the distance programme To be eligible, students enrolling in the distance delivery model must: * Be a resident in Auckland or have access to NZMA's Auckland Campuses * Be employed with a minimum of 20 hours in a relevant role in a Commercial kitchen (either paid or voluntary) and * Provide a workplace attestation from their employer confirming access to a commercial kitchen to produce the full range of course content * Have access to a computer with prescribed basic hardware requirements as per marketing material, a microphone, and a reliable internet connection
