About the course

What can I expect out of this qualification?

The purpose of this qualification is:
- To provide competent employees for the hospitality sector who are able to work as chefs in senior positions producing advanced dishes in a professional kitchen.
- To establish standards of professional practice for advanced cookery that can provide customers with confidence in a range of hospitality environments.

Graduates will be able to plan, control and direct the day-to-day and long-term operations of a professional kitchen including supervision of staff.
The strands in this qualification allow graduates to have advanced general cookery skills or to specialise in pâtisserie.

Entry Requirements

Minimum requirements

Applicants must meet the following criteria for admission into the programme: a) Successful completion of NZ2101 (New Zealand Certificate in Cookery Level 4); or b) Equivalent to the above Students who have not attained the age of 20 years and do not hold the required minimum entry requirements for a programme may also be eligible to enrol in exceptional circumstances. Such decisions will be made by the Head of Hospitality and Tourism.
